A New England Experience in Boulder, CO

Hi, I’m Marc, from Maine, and I’ve been cooking for 35 years in restaurants and hotels from coast to coast. The MAINE Event Food Truck menu is a sampling of my favorite eats and treats from my 23 years living, working, and raising my four amazing children in Maine. Several of my offerings are my original recipes and featured items on menus I created at the beautiful inns I served as Executive Chef in Maine. Now, I’m in business to bring these creations to you. With my personal touch and passion for creating a bit of happiness and smiles with food, I aim to bring fresh, locally sourced, and of course ‘imported’ Maine ingredients to Colorado! Enjoy!

Are you tired of picking up canned souped for work? Are you a soup addict that attends every Soup Swap your friends and coworkers invite you to? Why not add to the weekly or monthly variety by joining Chef Marc’s CSS! Currently, we are signing people up who are interested in joining our soup share. We’ll email you with details when we roll-out this awesome SOUPPORTUNITY!!

You can count on two staples to always be ready: my original Maine Clam Chowder and my Philly Clam Chowder. I will also have my signature vegan chili that makes meat lovers fall to their knees for more. There will also be seasonal offerings including watermelon gazpacho, cream of leek (vegan variety too!), mushroom beef barley, classic chicken noodle, and my grandma’s famous matzo ball soup!

CATERING

Catering allows me to offer my favorite and most well-received menu items over the years to a broader audience. Catering with a food trailer will enable me to tap into my naturally nomadic spirit. Fortunately, my sense of adventure, coupled with the strong organizational skills I learned in the military, is sure to make your next event a culinary success. My years of experience and the flexibility of the trailer, allows me to be a perfect caterer, preparing food for your next soiree, company party, wedding, or event, right on-site, no matter the availability of the kitchen.

Welcome to
The MAINE Event Food Truck!


I was first exposed to Colorado as a teen. I spent my summers horseback riding in Durango and continued to have many vibrant life experiences that prepared me for this venture. Some of those experiences included a US Marine Corps enlistment, two culinary degrees, and a professional career that has spanned decades. My career has taken me from sea to shining sea, cooking for celebrities in LA, managing a Marriott in Chicago, and spending 22 years as a Chef de Cuisine in Maine hotels and inns.

My time ‘Cheffing’ at inns in Maine is where the sparks became the dream that fed the desire to bring my love for the bounty of Maine westward. I am so thrilled to settle down back in the great state of Colorado and bring to you The MAINE Event Food Truck…food trailer that is!

It’s alive!!
The MAINE Event is born!

The dream and vision for The MAINE Event finally came together in the Summer of 2019, launching in Boulder, CO.

The MAINE Event will bring you a taste of the richness and diversity of the land I loved, where the sunrise first kisses the United States. Nowhere else have I seen and tasted such variety in natural bounty than in Maine. It’s not just about the famed and incredible lobster. While I am bringing lobster to you, and other Atlantic-sourced seafood, The MAINE Event will also feature samples of Maine’s rich agriculture: cranberries from the lowland bogs; wild blueberries that dot the landscape in summer from Kennebunk to Machias; along with venison harvested in the fall from the plentiful and thriving deer population. You will find a few 20th century Maine novelties and treats too, like the classic Whoopie Pie (think Oreo on steroids!) and Moxie, a beverage with a near cult-like following.

Whether for a casual lunch stop, night time indulgence, or any special event, make The MAINE Event a destination experience!
